Tagliatelle Verdi con Salsiccia





--1 teaspoon butter


--3 links mild Italian sausage, casings removed


--1/4 cup dry white wine


--2/3 cup heavy cream


--freshly ground pepper to taste


--pinch nutmeg, freshly grated if possible


--10 ounces or so tagliatelle or fettuccine--they really should be green (spinach) tagliatelle, but those can be hard to find. I've made this many times with ordinary pasta and it's still really good.

Bring a large pot of salted water to a boil (it boils faster with a lid on). Meanwhile heat the butter in a large skillet until foamy. Add the sausage meat, breaking it up with a spoon as it cooks. Cook until you don't see any pink, but don't overcook, or it will dry out. Add the wine and let it cook down for about 30 seconds. Add the cream and turn up the heat. Cook and stir for 2 or 3 minutes, or until the sauce is thickened somewhat and forms large, shiny bubbles.





Did I say put the pasta into the water once it boils? Oops. Do this before you start the sauce if you're using dried pasta. If you use fresh, you can put it in when your sausage is mostly cooked.





Take the sauce from the heat. (It's OK for the sauce to sit a couple minutes, if the pasta is not quite al dente.) Off the heat, add pepper to taste and a little bit of nutmeg. That may sound odd, but it really makes the dish--try it.





Drain the pasta and toss it with the contents of the skillet until combined. Pass the Parmesan cheese at the table.

an amazing one is pasta with tuna, mayo and sweetcorn. its so simple and so quick but really really gorgeous!!
You can do LOADS of stuff with pasta, and there are so many different types of pasta available too! My favourite is ravioli funghi (pasta stuffed with cheese and mushroom) and then pour a thick, cheese sauce over the top.


You can also get some spiral / shell pasta and add mayonnaise, grated carrot, spring onions, garlic and sweetcorn - lovely vegetarian lunch! Or you can make a chicken carbonara or white wine sauce with tagliatelli, mushrooms, onions, vegi's of your choice....There's just lots to do with pasta!!
Asparagus Pasta col Pesto








3 cloves garlic, minced


1/4 to 1/2 cup olive oil (do not substitute)


1 cup chopped or sliced asparagus, use only the tender half


or tips (asparagus can be substituted with broccoli,


string beans, or zucchini)


2 tablespoons minced onion


1/4 to 1/2 cup fresh basil, finely chopped


8 ounces pasta noodles of your choice


grated Parmesan cheese


Quick Pesto Sauce: Saute garlic, onion, and basil in olive oil until


the garlic and onion turns light brown. Do not over cook. Set aside


and keep warm.


Prepare the pasta of your choice according to package directions


except for the following:


Add 1 to 2 cups additional water. Just before water begins to boil,


add the asparagus or the vegetables of your choice. When the water


begins to boil add the pasta and cook according to directions


Drain the pasta and vegetable mixture and pour the pesto sauce over


the top, tossing lightly to coat. Top with parmesan cheese and serve


with French bread and additional parmesan cheese.

Toast some chickpeas, garlic and pine nuts in olive oil in a frying pan. Throw in your cooked pasta and then add lemon juice. Mix to serve.
Basic Meat Lasagna








This is a very basic, very easy to make meat lasagna.';











INGREDIENTS:


1 1/2 pounds ground beef


1 teaspoon garlic powder


1 (28 ounce) jar sausage flavored spaghetti sauce


1 (8 ounce) can tomato sauce


1 teaspoon dried oregano


1 tablespoon olive oil


4 cloves garlic, minced


1 small onion, diced


1 (8 ounce) package mozzarella cheese, shredded


8 ounces provolone cheese, shredded


1 (15 ounce) container ricotta cheese


2 eggs


1/4 cup milk


1/2 teaspoon dried oregano


9 lasagna noodles


1/4 cup grated Parmesan cheese

DIRECTIONS:


Preheat oven to 375 degrees F (190 degrees C).


In a skillet over medium heat season ground beef with garlic powder and oregano. Brown the meat and drain.


In a large sauce pan add spaghetti sauce, tomato sauce, and oregano; set aside. In a skillet heat olive oil. Saute garlic and onions for about 5 minutes. Mix sauteed onions and garlic with meat into the sauce and cook for 15 to 20 minutes.


Combine mozzarella and provolone cheeses in a medium bowl. In a medium bowl mix ricotta cheese, eggs, milk, and oregano.


Layer a 9x13 inch baking pan with just enough sauce to cover the bottom of the pan. Lay three lasagna noodles in the pan. Cover with sauce, then with ricotta mixture then sprinkle with mozzarella/provolone mixture; repeat layering. Finish with a layer of noodles and remaining sauce. Sprinkle with parmesan cheese.


Bake covered in a preheated oven at 375 degrees for 30 minutes. Uncover and bake for 15 minutes.

chop up veggies (tomatoes, cukes, purple onions, carrots, red peppers, yellow peppers, green peppers, broccoli, cauliflower) after pasta is done...cool in fridge for a while, then add veggies and your favorite italian dressing (more or less to taste) and BAM...great dish for dinner or whatever..
Shrimp Gambino





Preparation time: 8 minutes


Cooking time: 20 minutes


Makes 2 servings


6 ounces dried linguine


1 tablespoon olive oil


3 cloves garlic, minced


3/4 pound raw, tail-on, peeled shrimp


1 can (14 1/2 ounces) peeled, diced tomatoes,


2 ounces crumbled feta cheese


2 tablespoons fresh minced parsley, optional


Heat oven to 400 degrees. Heat water to a boil in a Dutch oven for pasta. Cook pasta according to package directions until al dente, about 10 minutes; drain. Set aside.


Meanwhile, heat olive oil in a large, heavy skillet over medium heat. Add garlic; cook, stirring, until golden and fragrant, about 1 minute. Add shrimp; cook, stirring, until shrimp begin to turn pink, about 2 minutes. Add tomatoes, stirring to blend; cook 2 minutes.


Toss shrimp-tomato mixture with cooked pasta. Place in a buttered 2-quart casserole; sprinkle feta over the top. Bake until sauce is bubbly and feta is slightly melted, about 10 minutes. Garnish with parsley
My mom gave me this recipe about a year or so ago, and it's fantastic!!





Spaghetti Pie





1 (1lb.) box spaghetti (or other pasta) cooked according to package directions, and drained


1 lb. ground beef


1 medium onion, chopped


1 small green bell pepper, chopped


2 - 3 cloves garlic, minced


1 (26 oz.) jar any flavor pasta sauce


1 1/2 c. sour cream


8 oz. cream cheese, softened


4 green onions, sliced thin (use the green AND white parts)


1 c. shredded cheddar cheese





Cook pasta according to package and drain. Grease a 13 X 9 pan and spread cooked pasta evenly in pan. Meanwhile, fry and crumble ground beef and onion until tender. Drain grease and return to pan. Add bell pepper, garlic and pasta sauce. Cover and simmer 15 minutes, stirring occasionally. Uncover and cook 5 - 10 minutes more, until bell pepper is tender.





Mix softened cream cheese, sour cream and green onions in a small bowl until well mixed. Spread evenly over cooked pasta in baking dish. Pour sauce/ground beef over that, spread to edges. Top with shredded cheddar and cover with foil.





Bake in preheated 350 degree oven for 25 minutes. Remove foil and bake 5 minutes longer.
Take any dried soup (ie packet soup mix) add water and dried pasta. Bring to boil in a pan and simmer for a few minutes until the pasta is ready. A cheap and delicious snack!

roast veg pasta bake is nice, roast some veggies then once done mix with chopped tinned tomatoes and pasta, top with cheese and bake. yummmy!!!!!
Pesto pasta which is simply pesto mixed into any pasta you like and serve with a glass of bubbly
This was handed down from my wife's grandma....


1 pound ground beef


1 cup of whole green olives


1 pound spaghetti (cooked)


1 tablespoon minced garlic


2 cans of tomato soup


Cheddar cheese


red bell pepper diced





Combine all ingredients except for cheese, put in a 9X13 cassarole dish, top with cheese, and bake at 350 degrees until boiling.
quick, simple, refreshing lemon pasta.

drain water, squeeze half a lemon in pan, add sliced garlic, olive oil and put back on the hob on top temp.





stir until sizzling (and the lemon smell wafts luxuriously around the kitchen!) then throw on the plate add cheese, salt and pepper to taste.

Skillet Lasagna


you take bow tie pasta, Jar of spaghetti sauce, 1 LB itialian sausage (ground) and motzarella cheese





cook your pasta and Sausage (seperate of corse). Then layer it, pasta, sausage, sauce, and cheese, finishing with the cheese. Just cook it on like medium until the cheese is melted. Really easy %26amp; really good.
pasta (cooked) tuna mayo sweetcorn peppers onions and what ever u want all mixed together mmmmmmmmm
1 cup Gorgonzala cheese crumbled


1 cup Italian Fontina cheese grated


1 cup Pecorino grated


2/3 cup whipping cream


2 cups heavy cream


1/2 cup chopped/ diced tomatoes


1 cup tomatoe suace


1 bunch (according to desired amount) fresh chopped up basil


1/2 stick butter


1 lbs Penne Pasta


1/4 -1/2 lbs Motzerela Cheese Slices





Take the first 7 items and mix in a big bowl together while boiling the noodles. Add about half the Basil to the mix. Throw in like a teaspoon of salt to the noodles while they cook.


Once the noodles are done mix them in with the cheese mix.


Put them in a large bowl that is oven safe.


Cut the butter up and place it all around the top.


Place the mozerella slices over the top evenly as possible.


Cook in the oven at 350 untill the mozerella is getting a little brown.


Pull it out serve it on a plate with a littel basil on top and eat up!


NOTE: I you want to have some for left overs the next day (which you will!) keep a little of the cheese sauce seperate from the mix in a cup. Then the next day when you reheat the meal throw the extra sauce in when you microwave it.


The noodles soak up the sauce and it will be kinda dry the next day.


ALSO if you dont like tomatoe chunks, like my husband, you can sub the tomatoes diced pieces for just the cup of tomatoe sauce.
