1 small stalk of celery, including the green tops, finely chopped

2 Tbsp chopped fresh parsley

1 28 oz. can whole tomatoes, including the juice, or 1 3/4 pound of fresh tomatoes, peeled, seeded, and chopped

1 Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, carrot, celery and parsley. Stir to coat. Reduce the heat to low, cover the skillet and cook for 15 to 20 minutes, stirring occasionally until the vegetables are softened and cooked through.

2 Remove cover and add the minced garlic. Increase the heat to medium high. Cook for garlic for 30 seconds. Add the tomatoes, including the juice and shredding them with your fingers if you are using canned whole tomatoes. Add the tomato paste and the basil. Season with salt and pepper to taste. Bring to a low simmer, reduce the heat to low and cook, uncovered until thickened, about 15 minutes. If you want you can push the sauce through a food mill to give it a smooth consistency.

Gently sweat onion and garlic. Add salt, pepper and a little chilli powder. Then add a tin of chopped tomatoes. Simmer until a nice thick sauce forms. Finally add basil. That's a basic tomato sauce, you can add things to it and use this as the sauce topping for pizzas too.
I like a hot sauce, so I use a tin of tomatoes and fresh tomatoes if I have some. I add onion, red pepper, garlic or garlic paste, and any other veg.such as celery or mushrooms. I then season with Cayenne pepper. I eat it with grated cheese on top. Lovely.

5 tomatoes, seeded and chopped

3 tablespoons extra virgin olive oil

1/4 cup chopped fresh basil

1 pound linguine pasta

Salt and pepper

Prepare tomatoes and add olive oil, basil, and salt and pepper to taste; mix gently. Bring large pot of salted water to a boil and add linguine; cook until al dente according to package directions. Drain linguine and immediately toss with tomato mixture; serve at once.
I make my own using cherry tomatoes, tinned tomatoes, tomato puree, basil, mint, oregano, garlic, onions and mushrooms, with a little sugar, black pepper and a smidgen of salt to bring out the flavours - blend it all with a little olive oil and maybe a glass of red wine.
