What's an easy pasta recipe for someone who doesn't have too much experience in the kitchen?

I want to surprise my mom when she comes home on Christmas since she's working all day. It would be better if there was no meat involved.What's an easy pasta recipe for someone who doesn't have too much experience in the kitchen?
I found this recipe for vegetarian speghetti:


INGREDIENTS


1 (16 ounce) package spaghetti


1 cup chopped onion


1/2 cup chopped celery


1 teaspoon garlic powder


3 tablespoons vegetable oil


1 (26 ounce) jar meatless spaghetti sauce


1 (16 ounce) can garbanzo beans or chickpeas, rinsed and drained


1 (14.5 ounce) can diced tomatoes with garlic and onion, undrained


1 teaspoon sugar


1/2 teaspoon salt


1/2 teaspoon dried oregano


1 bay leaf


1/4 cup grated Parmesan cheese








DIRECTIONS


Cook spaghetti according to package directions. Meanwhile, in a large skillet, saute the onion, celery and garlic powder in oil until tender. Add the spaghetti sauce, beans, tomatoes, sugar, salt, oregano and bay leaf.


Bring to a boil; cover and simmer for 10 minutes. Discard bay leaf. Drain spaghetti; top with sauce and Parmesan cheese. What's an easy pasta recipe for someone who doesn't have too much experience in the kitchen?
I tried this recipe the other day and it was fabulous!! Instead of frozen broccoli, though, I bought organic and steamed it. Remember to cook the shells in hot water while your oven is pre-heating, too


Broccoli %26amp; Cheese stuffed shells:


* 1 (15 ounce) container ricotta cheese


* 1 (10 ounce) package frozen chopped broccoli, thawed and well drained


* 1 cup shredded mozzarella cheese


* 1/3 cup grated Parmesan cheese


* 1/4 teaspoon ground black pepper


* 18 jumbo shell-shaped pasta, cooked and drained


* 1 (25.75 ounce) jar Prego庐 Tradtional Sauce





1. Stir the ricotta cheese, broccoli, 1/2 cup of the mozzarella cheese, Parmesan cheese and black pepper in a medium bowl. Spoon about 2 tablespoons of the cheese mixture into each shell.


2. Spread 1 cup of the pasta sauce in a 13x9x2-inch shallow baking dish. Place the filled shells on the sauce. Pour the remaining pasta sauce over the shells. Sprinkle with the remaining mozzarella cheese.


3. Bake at 400 degrees F for 25 minutes or until hot.
