If you are looking for a main dish:





Season chicken tenderloins with salt, pepper, garlic. Get an 8 oz. package of sliced portabella mushrooms.


Saute tenderloins and mushrooms in half butter/olive oil until brown on med high. Remove from pan. Deglaze the pan with a mixture of the juice of one lemon and 1/2 cup white wine. Turn on low and let simmer while you cook some angel hair pasta in salted water according to directions on box. Cook to al dente. Drain pasta (reserve a little of the water - a couple of tablespoons worth) and put pot back on heat. Toss in wine mixture and add chicken and mushrooms to reheat them. If you like things like olives - add some capers or olives right before you serve the pasta. Top with parmesan cheese and serve with steamed broccoli. This was a favorite when I catered and cooks up in about 25-30 minutes...
1/4 cup white balsamic vinegar


2 tablespoons olive oil


2 teaspoons country-style grainy mustard


1 pound cooked ditalini pasta


1/2 cup diced roasted red peppers (from water-packed jar)


1/4 cup chopped fresh basil leaves


Salt and ground black pepper


2 cups small mozzarella balls





In the bottom of a large bowl, whisk together balsamic vinegar, oil and mustard. Add cooked pasta, red peppers and basil and toss to combine. Season, to taste, with salt and black pepper. Fold in mozzarella cheese.
how about chicken parm w/ pasta on the side. a nice salad and crusty italian bread.
Make it simple. Buy a jar of Ragu Roasted Parm sauce, put over fett noodles and serve with garlic toast and salad. I usually add broc, onion, fresh mush and diced roma tomatoes to mine. OH........and don't forget the diced ck breasts!! Great meal, very filling and super for leftovers.

We make it in our house at least once a week.


10 years ago, when my daughter was 8, I taught her this recipe, and she loved to make it then as she does now. I invented it as a 'low fat' meal (depends how much grated cheese you add) to be eaten with a mixed salad and this is the first time that I've written it down so forgive the non-specific quantities. Try it and you and your boyfriend will love it.





Pasta Tuna Bake for 2 to 4 people





Boil loads of salted water and add one handful of dried penne pasta per person. Boil for 12-14 minutes until 'al dente'. Meanwhile, heat a small glug of olive oil in a large frying pan, add a diced onion and a finely chopped clove of garlic (one large one, or two small ones). Cook until transparent, but without colour. Then:-


Add a 200gm can of drained tuna chunks and mix well. Add a 400gm can of peeled plum tomatoes, chop and mix well, add a 200gm can of drained sweetcorn and mix well. Add a teaspoon of cornflower to a little milk (maybe 50ml tops) and mix well - pour into tuna/tomato mix and allow to thicken.


Turn the grill on the cooker to full. Meanwhile, drain the penne pasta well and mix well into the tuna/tomato mix, add a pinch of salt and 8 turns of the pepper grinder and mix well. Grate a 'handful' of strong cheddar cheese and sprinkle over the top.


Place the frying pan under the grill until the cheese melts (no more) - don't burn your hand on the handle. Serve with a mixed salad and enjoy.

Jimi’s Alfredo Sauce





Ingredients


1 whisk, 1 Garlic press


6 small or 4 big cloves of garlic (we like garlic)


4 cups of whole milk


4 table spoons of flour


Dash of dill


Dash of basil chopped dried


¾ stick of Butter


Cup or Parmesan cheese


Cup of medium cheddar cheese


two scoops of sour cream with a table spoon from the drawer (not measuring spoon)


Salt and pepper to taste





How to


On gas stove …”3-4” (med low)


Smoosh the garlic in a garlic press


Chop the ¾ piece of butter into lil chunks in a pan and sauté the garlic


Add flower and slowly pour in milk while whisking


Add dill and basil, Mix some more


Add Parmesan and cheddar and sour cream, Mix some more.





Should be thick but not too thick… if too thick for liking add more milk


Serve on spaghetti noodles
Any kind of pasta, with alfredo sauce, chicken, and broccoli. So good and so easy, I cheat and buy the stuff all premade and prepackaged but it works, my boyfriend lvoes it.

Chicken.


Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.


Pasta.


Place in salted boiling water and cook until you get the degree of cooking you like.


Penne or Elbows will do very well here.


Sauce.


Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.





Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.
this time of year it's all about te pumpkin and this pumpkin pasta is a HUGE hit with everyone i know. ENJOY:)





Stovetop Beef %26amp; Penne Casserole





2 cups (8 oz.) dry penne pasta (or small pasta of your choice)


2 lb. lean ground beef


1 medium onion, chopped


2 cans (12 fl. oz. each) NESTL CARNATION Evaporated Milk


1 can (15 oz.) LIBBY'S 100% Pure Pumpkin


1 can (15 oz.) tomato sauce


1 tablespoon packed brown sugar


1 tablespoon paprika


1 tablespoon Worcestershire sauce


2 teaspoons salt


1/2 teaspoon garlic powder


1/2 teaspoon ground black pepper


2 cups frozen peas, thawed





COOK pasta in large saucepan for 1 to 2 minutes less than package directions (pasta should be slightly firm in texture); drain.





COOK beef and onion in large saucepan over medium-high heat until beef is no longer pink; drain. Reduce heat to medium. Stir in evaporated milk, pumpkin, tomato sauce, sugar, paprika, Worcestershire sauce, salt, garlic powder and black pepper. Cook, stirring occasionally, until mixture begins to simmer. Add pasta and peas; stir until heated
