Poor mans pasta.............. Use old bread to make bread crumbs (about 4 slices) either crumble them with your finger tips or whizz them with a blender. 1 large clove of garlic, lots of olive oil and grated parmesan cheese.

Cook your pasta (I like to use linguinie) whilst its cooking fry the garlic and bread crumbs in a saucepan with the oil....careful not to let then burn. once pasta is cooked toss it in with the bread crumbs and a drizzle more olive oil. Then serve with grated parmesan.................This dish is quite dry but the oil makes it silky...........It is a winner!!!!!!!!!!!!!!!!!!!!
I love one pot cooking and this is so simple

Cook any pasta and before completely done, toss in chopped tinned hot dog sausages and a can of sweetcorn. Finish cooking and serve. Other tinned stuff can be added for variety.

Pasta with Sun-Dried Tomato Pesto and Feta Cheese:

The oil in the sun-dried tomatoes gives the almond-spiced pesto a rich consistency.

1 (9-ounce) package refrigerated fresh linguine

3/4 cup oil-packed sun-dried tomato halves, drained

1/4 cup loosely packed basil leaves

2 tablespoons slivered almonds

2 tablespoons preshredded fresh Parmesan cheese

1 tablespoon bottled minced garlic

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup (2 ounces) crumbled feta cheese

Cook pasta according to the package directions, omitting salt and fat. Drain through a sieve over a bowl, reserving 1 cup cooking liquid. Return pasta to pan.

While pasta cooks, place tomatoes and next 6 ingredients (through black pepper) in a food processor; process until finely chopped.

Combine tomato mixture and the reserved 1 cup cooking liquid, stirring with a whisk. Add to pasta; toss well to coat. Sprinkle with feta.

Yield: 4 servings (serving size: 1 cup)
Manicotti

Boil Manicotti shells until al dente.

Make the crab mixture according to the recipe on the back of the lump crab meat can.

Stuff the shells with the crab mix and place in a deep glass baking dish.

Using a basic bechemel sauce (recipe.com) add equal amount of sauce and grated white cheese (your choice, I sometimes use blue with ricotta and shredded jack). Add a palm full of grated lemon zest and simmer until the sauce is thick and bubbly.

Pour cheese sauce over shells and bake in a meduim hot oven until golden bubbly, about 25-30 minutes, maybe longer. Top each serving with a little sprinkle of paprika and dill, serve with lemon wedges and hot crusty bread.
