Anybody know any cold pasta recipes?

Pasta Salads!!!!s Here are some of my favorites:





Antipasti Pasta Salad:





1 box rotelle pasta


1 chub dry salami, cut into cubes


1 4oz package feta cheese


1 red bell pepper, seeded and chopped


1 bunch green onion, chopped


1 can sliced olives, drained


1 bottle good Italian dressing





Cook pasta and cool. Add remaining ingrediants and refrigerate for overnight or at least several hours.





Bacon Ranch Pasta Salad:





1 package elbow macaroni, cooked and cooled


5 slices bacon, chopped, cooked, and drained


1 package ranch dressing mix


1 cup mayonaise


1/2 cup sour cream


1 cup diced jack cheese


1/2 cup chopped celery


1 red bell pepper, seeded and chopped





Mix and refrigerate.Anybody know any cold pasta recipes?
I made this last night. Cook your favorite pasta shape (penne, farfalle, fusilli) al dente in lots of boiling, well-salted water. While it's cooking, combine about 1/4 cup pitted green olives (roughly chopped), about 1/2 cup pitted Kalamata olives (roughly chopped), a small handful drained roasted red pepper strips, about 2 teaspoons fresh thyme leaves (I have substituted basil instead, and it worked very well), a handful of chopped parsley, and a bit of salt and pepper. You can do that part up to a few hours ahead and let it sit out at room temperature covered with plastic wrap or a plate--it gives time for the flavors to combine.





On a separate cutting board or plate, coarsely chop a small handful of shelled pistachio or pine nuts and a few thin slices of prosciutto. (I have substituted both oil-packed tuna and shrimp for the prosciutto; I've also left out meat altogether when vegetarian friends were coming; any version is tasty.)





As soon as the pasta is cooked to your liking, drain it thoroughly and toss with the juice of half a lemon and a good drizzle of fruity extra-virgin olive oil. Let cool a few minutes. Then add the pepper/olive salad, the prosciutto if using, the pistachios or pine nuts, and toss. Don't add the nuts until the last minute: even though the leftovers are really good, the nuts get soggy if left in the salad for very long.





Serve portions with or without grated Parmigiano or Pecorino cheese. Anybody know any cold pasta recipes?
3 cups pasta of choice, cooked to equal 6 cups. drained and chilled


1 tablespoon fresh ginger, minced fine


1 teaspoon fresh minced garlic


1 cup chopped red sweet peppers


1 cup chopped sweet green peppers


1 cup thinly sliced green onion.


1/4 teaspoon crushed dried red pepper


1/4 cup cannola oil(or your favorite olive or salad oil


1/4 cup soy sauce


Mix all this together for an interesting pasta salad. If it is too dry, add a bit more oil and soy sauce in equal amounts.


I never add salt because the soy sauce is salty enough.
THREE COLOR PASTA SALAD





1 lg. pkg. three color pasta


4 chicken breasts


2 tbsp. olive oil


2 avocados, chopped


1 1/2 c. Mozzarella cheese, chopped


2 tomatoes or red peppers, chopped


Diet Hidden Valley Ranch dressing


1 c. toasted, slivered almonds


1 tsp. basil


1 tsp. salt


1 tsp. pepper


Chopped black olives





Brown chicken in olive oil and chop. Boil pasta according to directions and


cool. Toss the remaining ingredients with Ranch dressing and add the pasta


and chicken. Serve. VARIATIONS: Add ham, shrimp, chives or no meat at all.






I like to do a sesame/soy dressing on a linguine-type pasta, add some canned or seared tuna and a little cilantro. I'm new to this yahoo answers thing so I'm a little unclear of the etiquette: have you tried the following sources yet? They all seem like much better resources unless you are just putting a shout out to your homies.
Chilled Spaghetti Salad


1 pound thin spaghetti, broken into 3-inch pieces


2 cucumbers


1 green bell pepper


2 medium tomatoes


2 medium onions


1 small bottle Italian dressing


1/2 (2 ounce) bottle McCormick's Salad Supreme Seasoning





Cook and drain spaghetti; set aside. Peel cucumbers; remove seeds and cut into small pieces. Cut green pepper, tomatoes and onions into small pieces. Mix all ingredients with the spaghetti including seasoning. Pour Italian dressing over all. Let marinate overnight.



My favorite is a simple tuna mac salad.





Boil 1-2 cups macaroni until just slightly firm. Rinse thoroughly with cold water until mac is cool, drain. Add in 1 can tuna, 1-2 T mayo or Miracle Whip (I prefer MW), salt %26amp; pepper to taste, and 1 finely chopped celery stick. Mix thoroughly and smooth out in a bowl. Top with toasted bread crumbs.





For toasted bread crumbs, pour out onto a baking sheet/jelly roll pan. Sprinkle with garlic powder %26amp; seasoning salt. Place into a 375潞F oven until slightly browned. Let cool.
Cook some Macaroni once done put in fridge


Boil and Egg


Wash Some Celery, Peppers,Tomato(you'll need a quarter of it)


Cut up the celery and pepper(no seeds)Hard Boiled Egg White,Tomato (cut out the juicy part it will be in the Sauce) put in fridge


then make the sauce


1/4 cup mayonnaise


hard boiled egg yolk


choped basil leaf


The Juicy part of a tomato


Mix well and add everything together
here's a simple pasta salad--cook and chill the rotini pasta. you can use the colored noodles or plain. chop up plum tomatoes, a cucumber, a green bell pepper. toss in some zesty italian dressing, let set for a few hours to let flavors combine. easy!
You can make pasta salad. Add anything from celery to pepperoni to peppers to olives top with Italian dressing and enjoy.
