1 (16 ounce) package uncooked farfalle pasta


1 pound hot Italian turkey sausage, cut into 1/2 inch slices


1/2 cup olive oil, divided


4 cloves garlic, diced


1/2 onion, diced


2 small zucchini, chopped


2 small yellow squash, chopped


6 roma (plum) tomatoes, chopped


1 green bell pepper, chopped


20 leaves fresh basil


2 teaspoons chicken bouillon granules


1/2 teaspoon red pepper flakes


1/2 cup grated Parmesan cheese





Bring a large pot of lightly salted water to a boil. Place farfalle in pot and cook 8 to 10 minutes, until al dente; drain.


Place sausage in a large skillet over medium heat and cook until evenly brown; set aside. Heat 1/4 cup oil in skillet. Stir in garlic and onion, and cook until tender. Mix in zucchini, squash, tomatoes, bell pepper and basil. Dissolve bouillon in the mixture. Season with red pepper. Stir in remaining oil. Continue cooking 10 minutes.


Mix pasta, sausage and cheese into skillet. Continue cooking 5 minutes, or until heated through.What is a good pasta recipe?
Fettuccini Carbonara





INGREDIENTS


5 teaspoons olive oil


4 shallots, diced


1 large onion, cut into thin strips


1 pound bacon, cut into strips


1 clove garlic, chopped


1 (16 ounce) package fettuccini pasta


3 egg yolks


1/2 cup heavy cream


3/4 cup shredded Parmesan cheese


salt and pepper to taste





DIRECTIONS


Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.


Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.


In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

Mix together, add Mozzarella cheese to the top

Take a large Spanish style onion,chop it very small and drop it into a saucepan with some Olive oil and fry on a low heat, add a clove or two of garlic.some red and green pepper,half a kilo of very lean mincemeat and continue to fry.add a couple of mushrooms thinly sliced and a can of chopped tomatoes (you can liquidise about a Kilo of fresh tomatoes if you wish),simmer until ingredients well blended add herbs to taste-No salt, add to cooked Pasta (macaroni tubes work best. this is only basic recipe, add or leave out ingredients as preferred
My favourite is simple tomato sauce with pasta.





Fry an onion and a garlic clove (crushed) till soft in 3 tablespoons olive oil. Add large tin of chopped tomatoes (no salt/sugar added...pure tomaotes), a splash of red wine, 3 tablespoons of tomato paste and stir up well. Add about a tablespoon of dried mixed herbs at this stage or fresh basil and oregano 5 minutes before you are ready to serve ( just as you put the pasta on to cook.) If you want to add tot his, chop 2 anchovy fillets (from a jar with oil), 6 olives and a tablespoon of capers.....makes it even more delicious,


The secret is to use a lot of olive oil then cook it at low heat (just bubbling) for ages...maybe 45 minutes. If it seems quite runny, take the lid off, if it seems nice and thick and not too much juice, leave the lid on. Stir occasionally.





Cook the pasta and drain, spoon some sauce into the drained pasta and stir up then serve with more sauce on top. Add some finely grated parmesan (get some REAL parmesan not the ready grated it is SO much better!)

1lb pasta


1 lb of tomatoes


1/2 of onions


2 cloves of garlic


1 red pepper


1/2 eggplant


pinch of salt


1/3 lb mozzarella cheese


1/3 lb parmasian cheese





Basically, you first carmelize the onions-





Onions chopped and placed in a frying pan and browned till carmelized.





Remove from frying pan





In pot, boil pasta....





In frying pan where you removed the onions, add tomatoes, and the rest of the ingrediants....Place pasta in plate, add cheese then the ingrediants...Yum!!

Here's one of the easiest Italian pasta recipes there is -- but you've got to like garlic. It's called ';aglio, olio, e peperoncini'; (garlic, olive oil, and hot red pepper). It's a very common high-speed pasta dish.





Cook spaghetti in salted water to al dente. While it's cooking, heat 2-3 Tbs of olive oil in a saute pan. When it's hot, add in a couple of Tbs of chopped garlic and 1/4 Tsp crushed hot red peppers (or to taste) and stir until the garlic just barely starts to get brown. Don't let it get too brown -- it'll get bitter. Drain the pasta and add it into the pan with the aglio, olio e peperoncini, and mix well to coat the pasta. Salt and pepper to taste and enjoy.





If you've no taste for garlic ('twould be a pity), a variation you can try is to use anchovies instead (clearly, you have to like anchovies for this one). As the pasta cooks, heat 2-3 Tbs olive oil in a pan as above and using a wooden spoon, mash 3 or 4 anchovie filets into the oil. Try to make a thin paste, adding more oil if necessary. It's not absolutely critical that you obliterate all the anchovie. Add in the peperoncini, mix thoroughly and heat through, add in the pasta, mix again to coat the pasta with the oil-anchovie-pepperoncini paste, add salt and pepper to taste and enjoy.





It doesn't get much easier than this.
