What are some good casserole or pasta recipes...?

I'm a student looking to stretch a buck (more than once, lol). I need some student friendly, budget friendly, fill-your-belly recipes that aren't ENTIRELY bad for you.





Anything with pasta, or some kind of casserole would be great......a little bit of chicken or something incorporated would be awesome, but Im not looking for that to be the MAIN thing of the dish.





Ideas that I've had are..... chicken tetrazzini, linguine carbonara, spaghetti casserole, pizza casserole, broccoli and chicken casserole, chinese rice. Anymore ideas???

Penne with Chicken and Asparagus





NOTE: This make a huge amount of food. I suggest you cut the recipe in half.





1 (16 oz) package dried penne pasta


5 Tbs olive oil, divided


1.5 lbs skinless, boneless chicken breasts - cut into cubes


salt and pepper to taste


garlic powder to taste


1/2 cup low-sodium chicken broth


2 lbs asparagus spears, trimmed, cut into 1-inch pieces


1 clove garlic, thinly sliced


1/4 cup Parmesan cheese





Bring a large pot of lightly salted water to boil.


Add pasta, and cook until al dente, about 11 minutes.


Drain, and set aside.





Warm 3 tablespoons olive oil in a large skillet over medium-high heat.


Stir in chicken, and season with salt, pepper, and garlic powder.


Cook until chicken is cooked through and browned, about 5 minutes.


Remove chicken to paper towels.





Pour chicken broth into the skillet.


Then stir in asparagus, garlic, a pinch more garlic powder, salt, and pepper.


Cover, and steam until the asparagus is just tender, about 5 to 10 minutes.


Return chicken to the skillet, and warm through.





Stir chicken mixture into pasta, and mix well.


Let sit about 5 minutes.


Drizzle with 2 tablespoons olive oil and stir again.


Sprinkle with Parmesan cheese.What are some good casserole or pasta recipes...?
Baked Ziti with turkey sausage:





Ingredients





* 1 pound ziti noodles


* 1 pound sweet turkey sausage, cut into 1/2-inch thick slices (I buy the Jenny-O turkey sausage)


* 2 (28-ounce) cans diced tomatoes with seasonings (green pepper and onion or garlic and oregano, or any flavor you want)


* 2 teaspoons dried thyme


* 2 teaspoons dried rosemary


* 1 (15-ounce) container regular or part-skim ricotta cheese


* 4 cups grated part-skim mozzarella cheese, reserve 1 cup, for topping


* 1 teaspoon garlic powder


* 1/2 cup grated Parmesan





Directions





Preheat oven to 350 degrees F.





Cook pasta according to package directions. Drain and set aside. Meanwhile, cook sausage in a hot skillet over medium heat until golden brown on all sides. Add tomatoes, thyme and rosemary and simmer 5 minutes. Remove from heat. In a medium bowl, combine ricotta cheese, mozzarella cheese and garlic powder and mix well. Spoon 1/2 cup of the tomato sauce in the bottom of a 4-quart casserole dish. Top with half of the cooked ziti. Top with half of the cheese mixture. Top with 1 cup of the tomato sauce. Repeat layers (remaining ziti and remaining cheese mixture). Top with remaining tomato sauce. Sprinkle remaining mozzarella and parmesan cheese over top. Cover with foil and bake 30 minutes. Uncover and bake 15 more minutes, until cheese is golden and bubbly
Easy Chicken Tetrazzini





1 lb boneless chicken breasts or a whole chicken cut up


1 lb spaghetti


small velveeta


1 can rotel tomatoes


1 can cream of chicken soup





In a large pot of boiling water seasoned with salt, pepper, garlic power and onion powder place (or use fresh garlic and onion minced) place chicken and cook gently til done (about 20 minutes)


Remove chicken from water and return water to a boil.


Add pasta and cook til aldente


Cool chicken and cut into bite size pieces


In a small pot put soup, cheese and Rotel and melt slowly together


Drain pasta and place in a large casserole dish and mix in chicken and cheese mixture. Bake at 350 for about 10-15 minutes til bubbly and serve with some crusty bread. This freezes exceptionally well so make a double batch and freeze one without baking. When cooking later be sure to defrost before baking. Yummy!!! a family favorite.
Crock pot stews? Those 15-bean soup kits are good loaded up with extra veggies.





Fritattas - like a crustless quiche with just about anything you want or have on hand in it. I made a spaghetti/broccoli fritatta that was really yummy but just poured it all in a glass pie dish instead of cooking on stove first

Tuna Noodle Casserole


1 box elbow pasta


1 can cream of mushroom soup


2 cans tuna, drained


splash of milk (or water)


salt pepper + spices of your choice


shredded mozarella cheese (or cheese of your choosing)


frozen peas (optional)


fried onions (optional)





The pasta - meat - soup - cheese combo works pretty well for just about any variation - Taco casserole w/ beef + cheddar, etc.
How about chicken biriani. easy. fry off any chicken...., fillets, thighs, wings, anything you have.. in a little oil, 1/2 onion and 1 clove garlic. Set aside in an oven proof dish.Add a little more oil in frying pan and add 2 teaspoons of curry powder and 250 gms of rice. Fry gently for a few minutes.Add any vegies you may have handy, peppers, greenbeans etc Add rice mix to chicken. Add 1 litre of chicken stock ( water and a stock cube) 1/2 teaspoon salt and place in oven mark 4 . 180'c for approx an hour. Enjoy.
Make a box of mac %26amp; cheese. Then add a can of drained tuna. Or brown a pound of hamburger or sausage. Mix %26amp; eat.
