Looking for a good potato salad or pasta salad recipe?

We're having a 4th of July bbq, and I need a good recipe for either potato salad or pasta salad. Something summery, that goes with bbq'd burgers, chicken, and Italian sausage.





BTW, a few of the people coming to my bbq hate mayonnaise, so I'd like to stay away from a potato salad that contains it. I really like stuff that has a lot of vinegar. I love the tangy taste.





Any ideas?

Make your potato salad with a little mayo. You don't have to add a lot. Then mix mustard, dill relish or chopped dill, and red onion if you like, and salt, pepper, Cajun seasoning, and garlic and onion powder. It's the best potato salad. Antipasto Salad





8 oz. rotini or spaghetti noodles 1 Tbsp. vegetable oil


4 oz. hard salami, diced 1 cup celery, diced


1 small red onion, thinly sliced 1 cup cherry tomatoes, halved


1 cup pitted olives, halved 陆 cup green peppers, diced


1 cup mushrooms, sliced 1 tsp. salt


陆 cup Italian salad dressing 录 tsp. black pepper








1. Place salami, onions, olives and mushrooms in a large bowl.





2. Add Italian dressing, cover and refrigerate at least 3 hours.








3. Cook pasta, according to package directions, 1 hour before serving; drain well.





4. Add pasta, celery, tomatoes, green peppers, vegetable oil, salt and pepper to marinated salami mixture; toss to mix.








5. Cover, return to refrigerator for at least 30 minutes before serving.








Makes 10 servings
Here is my own recipe for pasta salad:





1 pkg of Wacky Mac pasta (prefer spirals)


1/2 bottle of Wishbone House Italian Dressing


1 can black olives (sliced or crumbled)


4 ounces grated parmesean cheese





Cook noodles according to package. Drain and run cold water over them until they are cold. Shake off any excess water and transfer from strainer to a bowl. Add in the dressing, olives, and parm and mix until well blended and all pasta is coated. If it is not enough dressing I myself lke to use 1 whole bottle on this recipe, makes it more yummy. You could make the batch bigger by doubling and tripling the recipe to fill your needs. This recipe will make enough to serve 10. Well, I hope that this helps you.

Since your guests don't like mayo, try this: use a little rendered bacon grease, add a little extra mustard (contains vinegar), crumbled bacon and blue cheese, dill or rosemary, salt and pepper as your base. Germans like to add this to warm potatoes, I prefer to add when potaotes are cold. Can add some lemon zest on top for a little more zest, or a tablespoon or two of nice vinegar.
Cucumber salad is yummy in the summer. With sliced cucumbers, tomatoes, red onion, vingegar(of your choice), sugar, salt, pepper and a bit of water. I added the vinegar, water and seasonings to taste. Also see the recipe on this list, I have not tried it but sounds good.

so just don't tell them that you used mayo in this:





cook cauliflower to tender crisp in bite size pieces.





3 hardboiled eggs diced


3 to 6 stalks celery finely sliced


1 or 2 bell peppers diced


3 to 6 cups cauliflower 1 medium head


1/2 cup dill pickle relish


optional: 3 carrots shredded or cut fine





blend together:


1/2 cup mayo


1/2 cup prepared mustard - your choice of flavor


2 teaspoons celery seed


enough dill pickle juice to make it sort of soupy.





shake well and pour over the salad.
my pasta salad


1 box cooked tri color pasta


1 box frozen peas and carrots thawed


1 big bottle zesty italian dressing


1/2 can black olives


1 cup broccoli florets


1 cube feta cheese


about 10 cherry tomatoes halfed





combine cool pasta with all veggies then add dressing and then the feta.
