RECIPES for cold fruit dessert, Pasta dishes?

I'm entering regional cooking competitions in my area, i need recipe ideas for : a cold fruit dessert, a pasta dish. I entered these last year, and the competition is tough! does anybody know of any really good recipes?RECIPES for cold fruit dessert, Pasta dishes?
Try this.Its more creative than just making pasta.





Spaghettini Carbonara Tartlets


MAKES 2 DOZEN





Prep Time: 30 min


Bake Time: 20 min


Ingredients





1/2 pound spaghettini


Two 1/4-inch-thick slices pancetta, cut into cubes


3/4 cup grated parmesan cheese





Salt and pepper


3 large eggs


1/2 cup heavy cream

















1. Preheat the oven to 375掳. Lightly grease 2 muffin pans. In a pot of boiling, salted water, cook the spaghettini until al dente; drain and return to the pot.


2. Meanwhile, in a medium skillet, cook the pancetta over medium-low heat until the fat is rendered, about 7 minutes. Using a slotted spoon, transfer the pancetta to a small bowl. Pour the pancetta fat into the drained spaghettini and toss together with 1/2 cup cheese and 1 teaspoon pepper. Swirl a small forkful of spaghettini into each muffin cup until about one-third full.


3. In a medium bowl, beat the eggs. Stir in the heavy cream and season with salt. Add about 1 tablespoon egg mixture to each muffin cup. Sprinkle the remaining 1/4 cup cheese and the pancetta on top. Bake until lightly golden around the edges, about 20 minutes.





Mango Napoleons


SERVES 6

Ingredients





1 sheet puff pastry, thawed


1/4 cup sugar, plus more for sprinkling


3 ripe mangoes, cut into small cubes





3/4 cup plain Greek-style yogurt


1 teaspoon pure vanilla extract

















1. Preheat the oven to 400掳. On a work surface, unfold the puff pastry and cut into 6 rectangles. Place on a parchment-paper-lined baking sheet and sprinkle with sugar. Bake until golden-brown, about 15 minutes, then lower the heat to 325掳 and bake for 5 minutes more. Let cool.


2. Meanwhile, toss together the mangoes and 2 tablespoons sugar; let stand for 5 minutes.


3. Mix the yogurt with the remaining 2 tablespoons sugar and the vanilla. Using a serrated knife, halve the baked pastries horizontally. Spread the yogurt-vanilla mixture on the bottom halves, spoon the mango on top and cover with the remaining pastry halves.RECIPES for cold fruit dessert, Pasta dishes?
