Anybody got any good recipes for broad beans (a.k.a fava beans) that aren't Pasta e Fageole or other soup?

Portuguese Fava Beans





My Mom's recipe. She doesn't really write anything down so this is an approximation of measurements. It's not a fussy recipe. You can play around with it and not ruin it. Favas are a Portuguese tradition and often served at Fiestas in the summer which is kind of a strange food to walk around with but who's complaining.





Ingredients:


2 cans of fava beans (approximately 3 cups). You may also use dried fava beans but you must soak them overnight and pre-cook them for at least one hour in boiling water before adding them to the dish.


3/4 lb. of linguica (Portuguese sausage)


2 large onions or 3 small onions, sliced


1 can tomato sauce


Tsp dried basil


Tsp dried thyme


Crushed red pepper to taste


Salt and pepper to taste


1/4 cup olive oil





How to:


1. Heat a large cast iron pan or dutch oven over medium-low heat


2. Coat bottom of pan generously with olive oil and add the onions


3. Simmer the onions until soft (about 10 minutes)


4. Add the thyme, basil, crushed red pepper, beans and tomato sauce and simmer for 40 minutes.





Serve with a nice loaf of bread for dipping!

yes! boil them in sesame oil and when your done add feta cheese and tomatoes! its great! trust me! oh and serve it with pita bread. true middle eastern style. i donno if you prefer can or bagged but i think canned is better for this. dont forget to add your fave seasoning!Anybody got any good recipes for broad beans (a.k.a fava beans) that aren't Pasta e Fageole or other soup?
Fresh Fava Beans With Pancetta


Fave fresche con pancetta





Ingredients: 4 lbs. fresh fava beans , 录 lb. pancetta, diced , , 1 Tbs. oil , 1 cup beef broth 1 onion, thinly sliced salt, pepper 1 celery stalk, sliced 2 Tbs. chopped parsley





Shell the fava beans (remove the skin if they are very big). Saute the pancetta, the onion and the celery in a saucepan with the oil, stirring frequently. When the fat of the pancetta has melted, add the fava beans, moisten with hot broth and continue to cook. When the fava beans are completely done (about 20 mins.), salt, pepper and sprinkle with chopped parsley. (Fresh peas can be prepared the same way.





Braised Fava Beans

Ingredients: 2 lb. fresh fava beans , 2 Tbs. prosciutto fat , 2 new onions, finely sliced , 1 oz. mortadella , , 1 cup beef broth 6 slices stale bread 2 Tbs. butter salt and pepper to taste





Shell the fava beans and set aside. In a casserole place the chopped prosciutto fat and the onions and saute till tender but not brown. Add the fava beans, chopped mortadella and the beef broth. Salt and pepper to taste. Cover the casserole and cook over low flame for 45 minutes, adding more broth if necessary. The final dish should be fairly moist. Saute the slices of bread in butter, browning on both sides. Place them on a serving platter and pour over the fava beans. Serve very hot





Fava Beans and Pasta with Peperoncino

Ingredients: 7 oz. dried fava beans , 3 oz. spaghetti , 1 onion, finely sliced , peperoncino , 1 large tomato , 6 Tbs. olive oil , salt





Let the fava beans soak in water for at least 24 hours, 48 if possible. Drain and remove the skins. Put 1 qt. of water in a pot with the fava beans, the onion and the peeled, seeded, chopped tomato. Salt, cover and cook over low heat for about 2 hours or until the fave begin to fall apart. Break-up the spaghetti into 1'; pieces. In a separate pot cook the pasta in plenty of salted water. When al dense, drain and add them to the fava beans. Add peperoncino and olive oil, mix well and serve. This soup is also good at room temperature





Fillet Steak with Green Beans and Fava beans

Ingredients: Ingredients for 6 persons:14 oz. fillet of beef cut in extremely thin slices - 14 oz. fresh fava beans - 14 oz. green beans boiled in lightly salted water - 3/4 cup extra-vergine olive oil - 20 basil leaves - the juice of 2 lemons - salt - white pepper.





Clean the fava beans and boil them in lightly salted water. Drain the fava beans and peel them. String the beans, remove the tips and boil them. Put the oil, lemon juice, basil leaves, salt and pepper in a blender and reduce to a pur鈥歟. Distribute the fava beans and green beans on 6 small dishes, arrange the slices of fillet atop them and baste with the sauce. Sprinkle with the fava beans and serve





Minestrone of Vegetables

Ingredients: 1 1/2 lbs. fresh fava beans , 1 1/2 Ibs. fresh, unshelled green peas , 2/3 lb. ripe tomatoes , 2/3 lb. white or golden onions , 1 1/2 lbs. zucchini , handful of basil leaves , 2 Tbs. minced parsley , 1 head of lettuce , 1 1/2 qts. olive oil , 1 qt. beef broth , salt, pepper





Shell the fava beans and the green peas (keep them separate). Peel, seed and chop the tomatoes. Slice the onions. Wash and slice the zucchini without peeling them. Clean, rinse and mince the basil and parsley. Place all the vegetables in a pot in the following order: first, place the tomatoes at the bottom of the pot, cover them with the onions, place the zucchini over them, then the lettuce and the green peas, sprinkle half the parsley and add the fava beans. Sprinkle the vegetables with the 011. Cover the pot and let cook over medium flame. Do not stir for about 10 minutes., that is, until the vegetables at the bottom of the pot release their water. Add the beef broth, a pinch of salt and a pinch of pepper. Stir, cover the pot and let cook on a very low flame for about an hour. (Do not add any water while the minestrone is cooking.) When ready, add the remaining parsley and serve. Neither rice nor pasta is to be added to this minestrone
