Recipe for creamy cold pasta salad!?

I'm looking for a fresh recipe for a cold creamy pasta salad, with basic ingredients.


something thats easy and can hold a while in the fridge!

PASTA SALAD





2 cups elbow macaroni





2 cups broccoli florets


1 stalk celery thinly sliced


2 green onions sliced


1/4 cucumber sliced


2 tbsp. fresh parsley





1 cup mayonnaise


1/2 cup sour cream


2 cloves garlic minced


2 tsp. prepared mustard


1/2 tsp. paprika and salt


8 cherry tomatoes optional





Cook pasta adding broccoli during last 4 minutes, drain. Rinse with cold water to cool, drain well.


In a large bowl combine pasta with celery, green onions, cucumber and parsley.


In separate bowl, combine mayonnaise, sour cream, garlic, mustard, paprika and salt, mix well. Pour over pasta mixture and toss to coat well. Cover and chill 2 hours or overnight. Just before serving add tomatoes and toss gently.Recipe for creamy cold pasta salad!?
INGREDIENTS





* 3 tablespoons olive oil


* 2 tablespoons red wine vinegar


* 1 teaspoon Dijon mustard


* 1 teaspoon garlic powder


* salt and pepper to taste


* 1/2 cup chopped green bell pepper


* 1/2 cup diced yellow bell pepper


* 1/2 cup chopped fresh mushrooms


* 1/2 cup chopped white onion


* 1 (8 ounce) package dry penne pasta


* 2 tablespoons light mayonnaise


* 2 tablespoons grated Parmesan cheese

DIRECTIONS





1. Preheat the oven broiler.


2. In a bowl, mix the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper. Spread the green bell pepper, yellow bell pepper, mushrooms, and onion on a baking sheet. Pour the oil and vinegar mixture over the vegetables.


3. Broil the vegetables 5 minutes, stirring occasionally, until lightly scorched. Remove from heat, and cool.


4. Bring a large pot of lightly salted water to a boil. Add penne pasta, cook for 8 to 10 minutes, until al dente. Drain, and rinse with cold water to cool.


5. In a large bowl, toss the vegetables, pasta, and mayonnaise. Top with Parmesan cheese to serve.
This is an eye ball it recipe:





Tri colored rotini, boiled and drained. Rinse with cool water and let the noodles cool down.





Chop up some red onions and seperate as well as possible. Mix up 1 itaillian or other vinegarette and 2 parts ranch dressing. Add slice olives, onions, kidney beans, and garbonzo beans to the noodles. Fold in dressing, cover and chill. YUM!!!








The vinegiarette that I like to use is...





Cowboy Vinaigrette:





1 1/2 cups apple cider vinegar


3 tbsp sugar


1/8 cup horseradish


3 cups plus 2 tbsp veggie oil


1/4 cup finely chopped red onion


1/8 cup worcestershire sauce


3/4 tbsp dijon mustard





Place everything but the oil in a food processor, and combine. Slowly add the oil until emulsified. Keep in an air tight container.





Mix with ranch dressing for a creamy vinaigrette for salads or to dip fries in.

I make my own ranch from scratch, but the Hidden Valley packets are very good as well.





Here is my recipe for ranch:





Ranch Dressing:





3/4 tsp dried chives


3/4 tsp dried parsley


1/4 tsp dill weed


1/2 tsp garlic powder


1/2 tsp onion powder


1/4 tsp salt


1/2 tsp black pepper


1 heaping cup mayo


1/2 cup buttermilk





Mix the dry ingredients into the mayo. Add the buttermilk and keep in a container in the fridge
This is a very simple and delicious. I get asked to take this to many carry-ins and picnics.





Bacon Ranch Pasta Salad





1 box pasta (any shape - I like rotini the best)


1 bottle of Ranch (Hidden Valley is my favorite)


---For the veggies, use as much as you like:---


Diced tomatoes or cherry tomatoes, quartered


Red Onion, chopped


Crumbled bacon pieces (I use about 1 package that I'll cook or 2 bags of real bacon pieces. You can use less, we like lots of bacon though)





Just cook pasta according to box directions. Drain and rinse with cold water.





Add veggies and bacon (set aside some bacon to put on top) and mix with 1 bottle of ranch. You need to let it chill a bit before serving. Before you serve it, you can add more ranch if it looks like it needs it and stir. I then sprinkle some bacon on top and serve.
12 oz. salad pasta


16 oz. frozen mixed vegetables


1 c. mayonnaise


4 oz. Italian dressing (creamy)


Dash sage, pepper, garlic %26amp; salt





Cook pasta and the last few minutes of cooking time, add vegetables. Drain both. Add spices. Make dressing with remaining ingredients and stir into pasta. Chill.
1 lb. pasta, cooked %26amp; drained


1 cup Italian salad dressing or vinaigrette


1 tablespoon Salad Supreme seasoning


3 tomatoes, chopped


2 cucumbers, chopped


1 1/2 red onions, chopped


2 green peppers, chopped








A nice traditional style Italian pasta dish
