If what you're trying to make is an Alfredo sauce, a lot of them don't call for cream cheese - just lots of parmasean. The Edam cheese could make for an interesting sauce - I've never tried it in a pasta sauce, but I love eating the cheese. I'm sure the Edam would melt properly. But without more info about the rest of your recipe, I can't really suggest a good substitute. Mozzarella and provolone also melt well. If you already have the Edam on hand and it's basically an Alfredo sauce, I'd try it. You may have just come up with your own variation on a very good pasta sauce!
